Blackened Pork With Maple Greens

  1. In a food processor, combine tomatoes, ginger, chili, garlic, star anise, cinnamon, soy sauce and sugar. Blend until smooth. Transfer to a saucepan and boil for 5 mins, to form a paste. Let cool then use to coat pork. Place pork in a baking dish, cover and marinate for 20 mins, or overnight.
  2. Preheat oven to 400u0b0F. Place pork on a rack in a roasting pan. Roast for 30-35 mins, brushing once with marinade. Let rest for 5 mins.
  3. Heat oil in a wok. Stir-fry onions and greens for 2 mins. Add maple syrup, soy sauce and 4 tbsp water. Stir-fry until greens are tender. Divide between 2 serving plates. Slice pork and arrange over greens.
