Blackened Pork With Maple Greens
- 2 None tomatoes, peeled
- 1 inch fresh ginger, peeled, chopped
- 1 None large red chili, seeded
- 1 clove garlic, peeled
- 1 None star anise
- 1 tsp ground cinnamon
- 3 tbsp dark soy sauce
- 3 tbsp dark muscovado sugar
- 12.25 oz pork tenderloin, trimmed
- 1 tbsp vegetable oil
- 1 bunch green onions, cut into 2 inch pieces
- 8 oz spring greens, coarsely shredded
- 2 tbsp maple syrup
- 2 tbsp light soy sauce
- In a food processor, combine tomatoes, ginger, chili, garlic, star anise, cinnamon, soy sauce and sugar. Blend until smooth. Transfer to a saucepan and boil for 5 mins, to form a paste. Let cool then use to coat pork. Place pork in a baking dish, cover and marinate for 20 mins, or overnight.
- Preheat oven to 400u0b0F. Place pork on a rack in a roasting pan. Roast for 30-35 mins, brushing once with marinade. Let rest for 5 mins.
- Heat oil in a wok. Stir-fry onions and greens for 2 mins. Add maple syrup, soy sauce and 4 tbsp water. Stir-fry until greens are tender. Divide between 2 serving plates. Slice pork and arrange over greens.
