Cranberry Turkey Burgers With Brie

  1. For the burgers, heat half the oil in a frying pan on a medium heat. Saute onion 1-2 mins. Transfer to a bowl to cool slightly. Add turkey, breadcrumbs, rosemary and cranberry sauce. Season to taste. Mix well and form into 8 flattened patties. Heat remaining oil in a frying pan on high. Cook patties 3-4 mins each side, until cooked through. Top each with a slice of Brie.
  2. To assemble, spread rolls with mayonnaise and fill with burgers and arugula. Serve with extra cranberry sauce.
