Berry And Raisin Buns
- 2 1/2 tbsp butter, chopped
- 1 cup self-rising flour, sifted
- 1 cup whole wheat self-rising flour, sifted
- 3/4 cup 2% milk
- 1/2 cup raisins, chopped
- 2 tbsp mixed berry jam
- None None powdered sugar, to dust
- Preheat oven to 400u0b0F. Line a baking tray with parchment paper.
- Cut butter into flour until mixture resembles fine crumbs. Add milk and raisins. Mix until dough just comes together. Turn out onto a lightly floured surface and knead until smooth. Shape into a 10x8 inch rectangle. Spread jam over top, leaving a 3/4 inch border. Roll up firmly from the long side, wrap in parchment paper and twist ends to seal. Chill for 15 mins.
- Discard parchment. Cut roll into 12 slices. Place slices, cut-side up, side by side, on a greased baking tray. Bake for 10-12 mins, or until risen and golden. Let cool on tray. Dust with powdered sugar to serve.
