Pear Clafoutis
- None None Butter, for greasing
- 4 None eggs, separated
- 1/2 cup granulated sugar
- 1 None vanilla bean, halved lengthwise
- 3-4 tbsp heavy cream
- 2 tbsp all-purpose flour
- 2 tbsp pear-flavored liqueur
- 2 None small pears, peeled, halved and cored
- 1-2 tbsp brown sugar
- Preheat the oven to 325u0b0F. Butter 4 individual baking dishes (4 to 6 oz each) and place on a rimmed baking sheet. In a large bowl, beat the egg yolks and 1/4 cup granulated sugar with an electric mixer on medium-high speed until pale and creamy. Scrape in the vanilla seeds. With the mixer on low speed, beat in the cream, flour, liqueur and a pinch of salt until just combined. Clean and dry the beaters.
- In another bowl, beat the egg whites until soft peaks form. Gradually beat in the remaining 1/4 cup sugar until the mixture is glossy and stiff. Using a rubber spatula, fold the beaten whites into the vanilla mixture until just combined. Divide the mixture among the prepared dishes. Place a pear half in each dish and sprinkle with the brown sugar. Bake for 35-40 mins until golden and puffed. Serve hot.
