Salmon With Peas And Mashed Potatoes

  1. Boil or steam potatoes until soft then drain.
  2. Meanwhile, heat 1 1/2 tbsp butter, add shallots and cook, stirring, until soft. Add stock and peas and simmer, uncovered, until tender. Add parsley and season. Add another 1 1/2 tbsp butter.
  3. Rub salmon skin with a little salt. Heat oil in a frying pan over medium-high heat. Place salmon, skin side down, in pan and cook for about 3 mins, uncovered, until skin is crisp and browned. Turn and cook for 1 min, or until salmon is cooked to your liking.
  4. Mash potatoes with milk and remaining butter until smooth. Season. Divide between serving plates. Arrange pea mixture around and top with salmon. Serve.
