Cherry And Almond Cake
- 6 1/2 tbsp butter, softened
- 1/3 cup firmly packed brown sugar
- 2 None eggs
- 2/3 cup ground almonds
- 1/2 cup self-rising flour
- 3 tbsp all-purpose flour
- 6 oz frozen cherries, halved
- 1/2 tbsp slivered almonds
- 2 tsp raw sugar
- None None fresh ricotta, to serve
- None None honey, to serve
- Preheat oven to 350u0b0F. Grease and line a 7 x 3 1/2 inch loaf pan with parchment paper.
- Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add ground almonds, flour and cherries and mix until just combined. Transfer to prepared pan, smooth surface and sprinkle with slivered almonds and raw sugar. Bake for 50 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely. Slice.
- Top with ricotta and drizzle with honey.
