Strawberry And Walnut Cake
- 1 cup butter, chopped, at room temperature
- 2/3 cup granulated sugar
- 4 None eggs
- 1 cup all-purpose flour, sifted
- 3/4 cup self-rising flour, sifted
- 1/2 cup ground almonds
- 1/2 cup milk
- 9 oz strawberries, hulled, chopped
- 1 cup walnuts, chopped
- None None FOR THE FILLING
- 1/4 cup strawberry jam
- 9 oz strawberries, hulled, sliced
- 1 1/4 cups heavy cream, whipped
- 1/4 cup walnuts, finely chopped
- None None powdered sugar, for dusting
- Preheat oven to 325u0b0F. Lightly grease and line a 9 1/2 inch round cake pan with parchment paper.
- Cream butter and sugar until pale and creamy. Beat in eggs, 1 at a time, beating well after each addition. Fold in flour, almonds and milk until just combined then gently stir in strawberries and walnuts. Transfer to prepared pan and bake for 1 hour 45 mins-2 hours, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then turn out onto a wire rack to cool completely.
- Using a large, serrated knife, cut cake in half horizontally. Spread jam over bottom 1/2 of cake then arrange 1/2 of the strawberries and 1/2 of the whipped cream over top. Top with remaining cake 1/2 and spread remaining whipped cream over top. Sprinkle with remaining strawberries and walnuts. Dust with powdered sugar.
