Easy Pea Soup With Ham

  1. Heat the oil in a pan, add the onion and potato and fry over medium heat for 6-7 mins. Stir in the peas, the stock and chopped mint and simmer for 10 mins.
  2. Remove the pan from the heat and use a stick blender to puree the soup. Stir in 2 tbsp of the buttermilk, along with most of the lemon zest and heat gently. Season to taste. Serve in a warmed bowl garnished with the reserved peas, chopped ham, almonds, remaining lemon zest and mint leaves, and drizzled with remaining buttermilk.
