Hoisin Pork Pastries
- 2 tbsp peanut oil
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 tsp finely grated fresh ginger
- 9 oz ground pork
- 2 tbsp flour
- 3/4 cup chicken stock
- 1/2 tbsp hoisin sauce, plus additional to serve
- 2 tbsp chopped fresh cilantro
- 6 sheets frozen puff pastry, thawed
- 1 None egg, lightly beaten
- Heat oil in a large skillet on medium heat. Add onion, cook, stirring, 2-3 mins or until golden. Add garlic and ginger; cook, stirring, 1 min or until fragrant. Add pork, stirring with a wooden spoon to break up lumps, 4-5 mins or until browned.
- Add flour; cook, stirring, 30 seconds or until mixture thickens. Gradually stir in stock, until combined. Bring to a boil. Reduce heat to low and simmer 5 mins until mixture thickens. Remove from heat. Stir in hoisin sauce and cilantro. Cool 10 mins.
- Meanwhile, preheat the oven to 375u0b0F. Using a 4 inch round cookie cutter, cut 12 rounds from half the pastry sheets. Using a 2 1/2 inch round cookie cutter, cut 12 rounds from remaining pastry sheets.
- Line a 12-cup muffin pan with 4 inch pastry rounds. Spoon pork mixture into muffin cups. Top with 2 1/2 inch rounds. Brush with egg. Using a fork, press edges to seal.
- Bake 20 mins or until golden. Serve with additional hoisin sauce.
