Polynesian Chicken
- 1 Tbsp. cornstarch
- 6 pieces broiler-fryer chicken breast
- 1 bottle French dressing
- salt and pepper to taste
- 1 (1 lb. 4 oz.) can pineapple chunks
- 1/2 c. chicken broth (bouillon cubes)
- 2 Tbsp. soy sauce
- 3 Tbsp. lemon juice
- 1 (10 oz.) pkg. frozen Chinese pea pods
- 1 (5 oz.) can water chestnuts, sliced
- 1/3 c. sliced green onion
- hot cooked rice
- Heat oven to 450u0b0.
- Brush chicken pieces with French dressing; sprinkle with salt and pepper.
- Arrange chicken skin side down in a shallow baking dish.
- Bake, uncovered, for 10 minutes.
- Drain syrup from pineapple into a small dish.
- Reserve pineapple.
- Add chicken broth and soy sauce to pineapple.
- Mix lemon juice with cornstarch; add to pineapple mixture.
- Return to 450u0b0 and bake about 30 minutes or until chicken is browned (be sure to baste chicken with mixture).
- Cook pea pods (as directions on package). Just before serving, combine cooked pea pods, drained water chestnuts, pineapple and onions with chicken and leave in oven for a few minutes to allow mixture to heat.
