Salmon Salad In Ciabatta Bowl

  1. Heat butter in a wide saucepan, add diced bread and toast for 3-4 mins, turning. Remove from pan and set aside to cool. Add 2 tbsp oil to the frying pan, add salmon and saute for 4-5 mins, turning. Remove from pan and set aside to cool slightly.
  2. Meanwhile, mix vinegar, onion and remaining oil together and season. Toss with peppers, cucumber, radish, lettuce and salmon then distribute between ciabatta.
  3. To finish, mix mayonnaise, ketchup, milk, Worcestershire sauce and sugar together and season. Drizzle over sandwiches and sprinkle with croutons. Serve.
