Cajun Spaghetti
- 1 lb. ground beef
- 1 lb. smoked sausage
- 1 lb. Jimmy Dean sausage
- 1 onion
- 1 bell pepper
- 4 garlic cloves
- 2 jalapeno peppers (no seeds)
- 1 (28 oz.) can whole stewed tomatoes, crush or chop
- 1 (14 oz.) can whole tomatoes, crush or chop
- 2 (8 oz.) cans tomato sauce
- 2 cans non-fat chicken broth
- 1 jar sliced mushrooms, drained
- 1 lb. your favorite spaghetti noodles
- 1 c. shredded Mozzarella
- 1 c. shredded Cheddar cheese
- Brown in nonstick pan separately ground beef, smoked sausage and Jimmy Dean sausage.
- Chop onion, bell pepper, garlic cloves and jalapeno peppers.
- Saute vegetables in olive oil and Creole seasoning.
- In large nonstick cooker with lid over medium heat, put stewed tomatoes, whole tomatoes, tomato sauce and chicken broth. Bring heat to medium-high and add meat, mushrooms and vegetables. Let mixture come to a bubble.
- Take spaghetti noodles and break into thirds.
- When mixture begins to boil, slowly add noodles. When everything is in cooker, cover and cook on medium heat for 5 minutes.
- Every 5 minutes turn stove down one notch and cook for 5 more minutes.
- Total cooking should be around 30 minutes.
- Stir occasionally.
- When finished, cover mixture with Mozzarella and Cheddar cheese.
- Cover and let stand for 10 minutes.
- Great with garlic bread and salad.
