Squash And Caramelized Onion Scones
- 2 1/2 tbsp butter
- 1 tbsp oil
- 1 None red onion, thinly sliced
- 2 tbsp honey
- 2 tsp white balsamic vinegar
- None None Squash Scones
- 3 1/4 cups self-rising flour, sifted
- 1/2 cup butter, chopped, softened
- 1/2 lb winter squash, cooked, mashed and cooled
- 1/2 cup buttermilk + extra to glaze
- 1 None egg, lightly beaten
- 1 tsp dried thyme
- None None sliced cheese, to serve
- None None tomato chutney, to serve
- Preheat oven to 425u0b0F. Lightly grease and flour a baking tray.
- For the caramelized onions, heat butter and oil over medium heat. Sweat onion for 6-8 mins, until tender. Add honey and vinegar. Cook, stirring, over low heat for 4-5 mins, until caramelized. Let cool.
- Meanwhile, sift flour into a large bowl. Cut in butter until mixture resembles breadcrumbs. Add squash, buttermilk, egg, thyme and caramelized onions. Season. Quickly mix into a soft, sticky dough. Turn out onto a floured surface and knead lightly. Press into a 3/4 inch thick disc then cut into 16 - 2 1/2 inch rounds. Place close together on prepared tray and brush with extra buttermilk. Bake for 20-25 mins, or until golden brown. Let cool on a wire rack.
- Serve with sliced cheese and tomato chutney.
