Fruit Loaf
- 75 ml semi-skimmed milk
- 375 g plain flour
- 42 g dried yeast
- 2 tbsp sugar
- 150 g butter, softened
- 1/2 None lemon, zested
- 30 g ground almonds
- 100 g raisins
- 50 g currants
- 1 tsp cardamom
- 30 g candied lemon peel
- Heat milk until lukewarm. Place the flour in a bowl, create a well in the middle, crumble in the yeast, pour in the warm milk and mix well with half the sugar until a dough is formed. Place the dough in a warm place for about 30 minutes.
- Mix the butter, remaining sugar, a pinch of salt, lemon zest, almonds, raisins, currants, cardamom and candied peel together then mix in with the dough. Knead well and let it proof in a warm place for another 30 minutes.
- Preheat oven to 325u0b0F. Turn the dough out onto a baking tray lined with baking paper and form a loaf shape. Leave to proof for another 15 minutes in a warm place then bake for 45-50 minutes. Allow to cool before cutting into slices.
