Mexican Casserole
- 1 large bag nacho cheese Doritos
- 1 lb. ground beef or sausage
- 3 c. grated Jack/Colby cheese
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can diced Ro-Tel tomatoes
- Cook and brown meat; drain.
- Stir in soups and Ro-Tel tomatoes, simmering for about 15 minutes, with occasional stirring to prevent sticking.
- In medium size cake pan, semi-crush enough Doritos to layer entire bottom of pan.
- Over top of Doritos, pour ingredients that have been simmering.
- Spread evenly over Doritos. Using the remaining Doritos from bag, semi-crush them and sprinkle over top of mixture in pan.
- Spread shredded cheese evenly over top of Doritos.
- Bake at 350u0b0 until cheese is melted.
- Makes 6 to 8 servings.
