Chicken And Seafood Gumbo
- 1/4 cup canola oil
- 1 lb chicken legs or thighs
- 2 stalks celery, sliced
- 1 None onion, sliced
- 1 None leek, trimmed, sliced
- 1 None green pepper, seeded, sliced
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 tsp smoked paprika
- 2 cups chicken stock
- 1 (13.5 oz) can diced tomatoes
- 3 tsp Tabasco sauce
- 9 oz raw shrimp, peeled, deveined
- 9 oz boneless fish fillets, cubed
- 1 handful fresh parsley leaves, chopped
- None None lemon juice, to taste
- None None steamed rice, to serve
- Heat 2 tbsp oil in a large frying pan over high heat. Brown chicken then set aside.
- Add remaining oil to pan. Saute celery, onion, leek, pepper and garlic for 5 mins, until tender. Add flour and paprika. Cook, stirring, for 1 min. Return chicken to pan along with stock, tomatoes and Tabasco. Season to taste. Simmer for 10-15 mins.
- Add seafood and simmer for 5 mins. Add parsley and lemon juice. Serve with rice.
