Chicken And Seafood Gumbo

  1. Heat 2 tbsp oil in a large frying pan over high heat. Brown chicken then set aside.
  2. Add remaining oil to pan. Saute celery, onion, leek, pepper and garlic for 5 mins, until tender. Add flour and paprika. Cook, stirring, for 1 min. Return chicken to pan along with stock, tomatoes and Tabasco. Season to taste. Simmer for 10-15 mins.
  3. Add seafood and simmer for 5 mins. Add parsley and lemon juice. Serve with rice.
