Mini Herb And Pepper Cheese Roll-Ups
- 4 slices sandwich bread, without crusts
- 1 clove garlic, peeled and finely chopped
- 5 stalks chives, finely chopped
- 5 stems parsley, chopped
- 50 g roasted marinated red peppers, drained and finely diced
- 125 g cream cheese
- None None wooden skewers
- Beat the cream cheese until smooth then season to taste. Divide in 1/2. Mix the chives, parsley and garlic into 1/2. Mix the peppers into the other 1/2.
- Lay each slice of bread between 2 sheets of plastic wrap and roll flat. Spread the herbed cream cheese over 2 slices and the pepper cream cheese over the remaining 2 slices. Roll them up, wrap tightly in plastic wrap and chill for 30 mins.
- To serve, remove the plastic and cut the rolls into 1/3 inch thick slices. Place the rolls on skewers and serve in glasses.
