Lemon Chicken Burgers With Caramelized Onion

  1. Combine ground chicken, breadcrumbs, egg, garlic, onion, cilantro and lemon peel in large bowl. Season. Using wet hands, shape into 4 patties and place on a tray.
  2. Heat 1 tbsp of the oil in a large skillet on medium heat. Cook burgers for 4-5 mins each side, until browned and cooked through. Cover and keep warm.
  3. Heat remaining 3 tbsp oil in same skillet on medium-low heat. Cook 3/4 of the red onion for 5-8 mins, adding sugar halfway through, stirring, until soft and brown.
  4. Meanwhile, combine avocado, yogurt and lemon juice in a small bowl.
  5. Stack salad greens, most of the caramelized onion, burgers, cucumber and tomato on roll bottoms. Drizzle over avocado mixture. Top with raw onion, additional cilantro and remaining caramelized onion. Season with pepper.
