Potato, Bacon And Sausage Pizza With Fresh Arugula Topping

  1. Preheat oven to 450u0b0F. Line 2 baking sheets with parchment paper and place a pizza crust on each.
  2. Heat half the oil in a large frying pan and fry the sausages for 10 mins or until cooked through. Drain on a paper towel and slice thinly. Add the bacon to the pan and cook, stirring, for 3-4 mins.
  3. Spread the sauce on the pizza crusts. Top with half the cheese and the potato, then layer on the bacon, sausage and remaining cheese. Bake for 12-15 mins or until the crusts are crisp and the cheese is golden.
  4. Meanwhile, combine the onion, arugula and remaining oil in a medium bowl. Remove the pizzas from the oven. Top with the arugula mixture and cut into squares to serve.
