Sweet Potato And Sunflower Seed Loaf
- 2 cups flour
- 1 tsp baking soda
- 2 tsp mixed spice, such as pumpkin pie spice
- 1/2 tsp ground nutmeg
- 5 oz dried figs, coarsely chopped
- 1 1/4 cups sugar
- 1 1/2 cups mashed cooked sweet potato
- 8 tbsp (1 stick) butter, melted
- 2 None eggs, lightly beaten
- 1/4 cup milk
- 1/4 cup sunflower seeds
- Preheat the oven to 350u0b0F. Grease and line a 8 x 4-inch loaf pan with parchment paper, extending the paper 2 inches over long sides for handles.
- Sift the flour, baking soda, mixed spice and nutmeg into a large bowl. Stir in the fig and sugar. Make a well in the center. Add the combined mashed sweet potato, butter, egg and milk. Gently stir until just combined. Spoon the mixture into the prepared pan. Sprinkle the top with sunflower seeds.
- Bake for 1 hour or until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
