Fish With Prosciutto And Spring Onions
- None None FOR THE ROSEMARY MARINADE
- 1 tbsp olive oil
- 2 tsp finely chopped fresh rosemary
- 1 tsp fresh thyme leaves
- 1 clove garlic, minced
- 2 tbsp lemon juice
- None None FISH WITH PROSCIUTTO AND SPRING ONIONS
- 14 oz spring onions, trimmed, halved lengthwise
- 1 None lemon, quartered
- 2 sprigs fresh rosemary
- 4 None firm white fish fillets, skin-on, halved
- 4 slices prosciutto, halved
- Preheat oven to 425u0b0F. Heat a large oiled baking dish in oven.
- Whisk together ingredients for rosemary marinade in a large bowl. Add spring onions, lemon wedges and rosemary. Add fish and turn to coat. Arrange fish, skin-side down, in hot baking dish. Top with prosciutto and bake for 20 mins.
- Divide onion mixture between serving plates. Top with fish and roughly chopped prosciutto.
