Ricotta And Strawberry Cheesecake
- 1/2 cup raisins
- 1/2 None orange, finely grated zest and juice
- 1/2 cup ricotta
- 1/2 cup sour cream
- 1 tbsp all purpose flour
- 1 None large egg, separated, plus 1 large egg white
- 2 tbsp honey, warmed
- 8 None strawberries, halved
- None None powdered sugar, for dusting
- Preheat oven to 350u0b0F. Lightly grease an 7 inch springform pan and line with baking paper.
- Combine raisins and orange juice in a small bowl. Set aside for 5 mins.
- In another bowl, combine ricotta, sour cream, flour, egg yolk and orange zest. Stir in raisins and juice.
- In a small, clean bowl, beat egg whites until soft peaks form. Fold in honey. Gently fold egg white mixture into ricotta mixture. Pour into the pan and smooth top.
- Bake for 30-35 mins, until just set. Cool in turned-off oven for 30 mins. Chill until ready to serve.
- Decorate with strawberries and sprinkle with powdered sugar.
