Strawberry French Toast
- 3 None medium eggs
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 3/4 cup milk
- 1 tbsp butter
- 1 tbsp vegetable oil
- 8 thick slices raisin toast, crust removed
- 9 oz strawberries, hulled, quartered
- 1/2 tsp rose water
- 1/2 cup strawberry jam
- None None yogurt, to serve
- None None powdered sugar, to dust
- Whisk together eggs, sugar and vanilla. Whisk in milk.
- Heat butter and oil together in a medium frying pan over high heat. Dip each slice of bread into egg mixture to coat then cook for 2-3 mins per side, or until crisp and golden. Drain on paper towels. Repeat with remaining bread.
- Meanwhile, toss strawberries and rose water together. Spread jam over toast then cut in 1/2 diagonally. Top with strawberry mixture and yogurt. Dust with powdered sugar to serve.
