Golden Raisin Madeira Cake With Lemon Icing

- 3/4 cup butter, softened
- 1 cup sugar
- 1 tsp lemon zest, finely grated
- 3 None large eggs, at room temperature
- 1 cup self-rising flour, sifted
- 3/4 cup ground almonds
- 1/4 cup lemon juice
- 3 oz golden raisins
- None None Lemon Icing
- 1/2 cup powdered sugar, sifted
- 1 tbsp lemon juice
- Few drops yellow food coloring
- Preheat oven to moderately slow, 325u0b0F. Lightly grease and line the base and sides of a 4 x 8 inch loaf pan with parchment paper.
- In a large bowl, beat butter, sugar and zest together until pale and creamy. Add eggs, one at a time, beating well after each addition.
- Using a wooden spoon, lightly fold in flour, almond meal and lemon juice until combined. Fold in raisins.
- Spoon into pan and smooth surface. Bake for 40-45 minutes or until a skewer inserted in the center comes out clean. Cool in pan for 5 minutes. Turn onto a wire rack to cool completely.
- To make the icing: In a small bowl, combine powdered sugar, juice and a few drops of food coloring to a runny paste. Pour over cake, allowing it to drizzle down the sides. Set aside 1 hour to set. Store in an airtight container for up to three days.
