Golden Raisin Madeira Cake With Lemon Icing

  1. Preheat oven to moderately slow, 325u0b0F. Lightly grease and line the base and sides of a 4 x 8 inch loaf pan with parchment paper.
  2. In a large bowl, beat butter, sugar and zest together until pale and creamy. Add eggs, one at a time, beating well after each addition.
  3. Using a wooden spoon, lightly fold in flour, almond meal and lemon juice until combined. Fold in raisins.
  4. Spoon into pan and smooth surface. Bake for 40-45 minutes or until a skewer inserted in the center comes out clean. Cool in pan for 5 minutes. Turn onto a wire rack to cool completely.
  5. To make the icing: In a small bowl, combine powdered sugar, juice and a few drops of food coloring to a runny paste. Pour over cake, allowing it to drizzle down the sides. Set aside 1 hour to set. Store in an airtight container for up to three days.
