Spiced Salmon With Tomatoes
- 2 cloves garlic
- 2 tsp lime juice
- 1 tsp black mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp chili flakes
- 1/2 tsp black peppercorns
- 1/2 tsp turmeric
- 4 None salmon fillets
- 4 None tomatoes, sliced
- 1/4 cup olive oil
- 2 oz fresh cilantro leaves
- None None steamed rice and lime wedges, to serve
- Preheat oven to 400u0b0F. Line a baking sheet with parchment paper. For the spice mixture, use a mortar and pestle to grind garlic, lime juice, mustard seeds, cumin, chili flakes, peppercorns, turmeric and a pinch of salt into a rough paste. Spread on salmon.
- Arrange tomatoes on prepared baking sheet. Drizzle with half the oil and season to taste. Roast 5 mins. Sprinkle with half the cilantro leaves. Lay the salmon on top. Drizzle with remaining oil. Bake 8-10 mins, until salmon is cooked to taste. Sprinkle with remaining cilantro leaves. Serve with steamed rice and lime wedges.
