Asparagus Penne With Garlic Crumbs
- 13 oz penne pasta
- 4 slices prosciutto
- 2 tbsp butter
- 1 cup fresh breadcrumbs
- 1 clove garlic, crushed
- 1 bunch asparagus, trimmed, halved
- 2 oz creamy blue cheese, crumbled
- Preheat oven to 350u0b0F. Line an oven tray with parchment. Cook pasta in a large saucepan of boiling salted water, following package instructions. Drain well.
- Place prosciutto in a single layer on oven tray. Bake for 3-5 mins, until crisp. Set aside. Melt half the butter in a large saute pan on high. Saute breadcrumbs and garlic for 3-4 mins, until crisp and golden. Transfer to a bowl and set aside.
- Add asparagus to same pan with remaining butter and cook for 1-2 mins, until just tender. Return pasta to pan with blue cheese. Toss well. Season to taste.
- Serve topped with crispy prosciutto and garlic crumbs. Garnish with parsley, if desired.
