Chocolate And Raspberry Cake
- 5.25 oz dark chocolate, chopped
- 12 tbsp butter, chopped
- 1/3 cup cocoa powder, mixed with 1/3 cup hot water until smooth
- 1/3 cup brown sugar
- 1 1/4 cups ground almonds
- 4 None eggs, separated
- None None Chocolate Ganache
- 7 oz dark chocolate, chopped
- 2/3 cup heavy cream
- 8.5 oz fresh raspberries, to serve
- Preheat oven to 350u0b0F. Grease a deep 8 inch cake pan and line base and sides with parchment paper.
- Gently melt chocolate and butter over low heat, stirring. Remove from heat and stir in cocoa mixture, sugar, ground almonds and egg yolks. Whip egg whites to soft peaks then fold in. Transfer to prepared pan and bake for 1 hour 15 mins. Let cool in pan for 15 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the chocolate ganache, stir chocolate and heavy cream in a small saucepan over low heat until smooth.
- Arrange raspberries on cake. Pour ganache over top to partially cover berries. Leave at room temperature until set. Serve.
