Steak Nachos With Salsa
- 2 tbsp oil
- 1 small beef steak
- None None parchment paper
- 3 None tomatoes, finely diced
- 1 None onion, finely diced
- 1 clove clove, finely chopped
- 1 None red chilli pepper, deseeded and sliced finely
- 3 tbsp light balsamic vinegar
- 1/2 tsp sugar
- 2 tbsp olive oil
- 4 oz tortilla chips
- 4 oz cheddar cheese, finely grated
- 2 oz medium-hot Jalapeno peppers, sliced
- 4-6 stems cilantro, leaves only
- None None sour cream
- Preheat oven to 250u0b0F. Heat the oil in a large frying pan and saute the steak on high heat for 1 min on each side. Season with salt and pepper, remove from pan and place on a baking sheet lined with parchment paper. Cook for 15-20 mins. Meanwhile mix the tomatoes, onion, garlic, red chili pepper, vinegar, salt, pepper and sugar. Mix in the olive oil.
- Distribute the tortilla chips and cheese on an oven proof plate (or on a baking sheet lined with a plate-sized circle of parchment paper). Take the steak out of the oven and turn the heat up to 325u0b0F. Allow the steak to rest for 4-5 mins, then cut into cubes. Bake the chips for 4-5 mins.
- Arrange the steak, Jalapenos and some of the tomato salsa on top of the chips. Sprinkle with cilantro and black pepper. Serve the remaining salsa in a bowl, accompanied by a bowl of sour cream.
