Spicy Turkey Tacos With Avocado Salsa
- 1 tbsp olive oil
- 2 None shallots, finely sliced
- 2 tsp dried oregano
- 1 tsp ground cinnamon
- 1 tsp ground coriander
- 1 tsp brown sugar
- 8.75 oz cooked turkey meat, finely shredded
- 1 None lime, juice
- 1 lb tortillas
- None None Avocado Salsa
- 3/4 cup canned corn kernels, drained
- 1 None avocado, pitted, peeled, chopped
- 1 None lime, peeled, flesh finely chopped
- 1 None small red chili, finely chopped
- None None wild arugula, to serve
- Heat oil in a medium frying pan over high heat. Saute shallots for 1-2 mins, until tender. Add oregano, cinnamon, coriander and brown sugar. Cook for 30 seconds, until sticky and fragrant. Add turkey meat. Cook, stirring, until warmed through. Remove pan from heat. Add lime juice. Season. Let cool slightly.
- Meanwhile, to make the avocado salsa, in a small bowl, combine corn, avocado, lime and chili. Season.
- Heat a grill pan over high heat. Brush tortillas with oil then grill for 30 seconds per side, until golden. Top with turkey, salsa and baby arugula. Serve.
