Tuna Salad
- 4 None tomatoes, cut into chunks
- 1 None cucumber, quartered lengthwise, thickly sliced
- 2 None celery stalks, thinly sliced diagonally
- 2 tbsp baby capers, rinsed and drained
- 2 None green onions, sliced
- 3 cans (6 oz each) tuna packed in water, drained and flaked
- 2 tbsp chopped fresh parsley
- 2 tbsp fresh mint leaves
- 1 None lemon, peel finely grated and lemon juiced
- 1 tbsp extra-virgin olive oil
- 1 clove garlic, crushed
- None None Toasted pita bread, to serve
- Place tomatoes, cucumber, celery, capers and green onions in a serving bowl. Add tuna, parsley and mint.
- Whisk lemon peel and juice, oil and garlic in a small bowl. Season to taste.
- Just before serving, drizzle dressing over salad. Toss well. Serve with toasted pita bread.
