Lemon Roasted Salmon With Olive Mashed Potatoes

  1. Preheat the oven to 425u0b0F. Put the potatoes and garlic in a saucepan of cold water with 1 tsp of salt. Bring to a boil and simmer over a medium heat for 12 mins. Drain well and return to the pan. Cover and keep warm.
  2. Meanwhile, place salmon fillets in a roasting pan and season with salt and pepper. Top each fillet with lemon slices and a sprig of rosemary. Tie them in place with kitchen string, drizzle with a little olive oil and bake for 10 mins.
  3. Using a wooden spoon, crush the potato and garlic mixture with the remaining oil into a coarse mash. Stir in the olives and parsley and season to taste.
  4. Remove string from the salon and serve with the mashed potatoes.
