Lemon Roasted Salmon With Olive Mashed Potatoes
- 2 lbs potatoes, peeled and chopped into cubes
- 6 None garlic cloves, peeled
- 1 tsp salt
- 4 None salmon fillets, about 7 oz each
- 2 None lemons, sliced
- 4 None sprigs fresh rosemary
- 1/2 cup extra virgin olive oil
- 1/3 cup pitted black olives, chopped roughly
- 2 tbsp chopped fresh parsley
- Preheat the oven to 425u0b0F. Put the potatoes and garlic in a saucepan of cold water with 1 tsp of salt. Bring to a boil and simmer over a medium heat for 12 mins. Drain well and return to the pan. Cover and keep warm.
- Meanwhile, place salmon fillets in a roasting pan and season with salt and pepper. Top each fillet with lemon slices and a sprig of rosemary. Tie them in place with kitchen string, drizzle with a little olive oil and bake for 10 mins.
- Using a wooden spoon, crush the potato and garlic mixture with the remaining oil into a coarse mash. Stir in the olives and parsley and season to taste.
- Remove string from the salon and serve with the mashed potatoes.
