Pineapple Chicken Stir Fry

  1. Cut chicken into 1/8 inch slices.
  2. In bowl, stir chicken, soy sauce, sherry, and ginger.
  3. In skillet over medium high heat, cook vegetables in hot oil until tender, stirring frequently.
  4. Return vegetables to skillet and add pineapple with syrup, vinegar, and salt.
  5. Stir water and cornstarch in a cup; add to skillet and cook until sauce is thickened and smooth, stirring constantly.
  6. Makes 4 main dish servings; 360 calories per serving.
