Pineapple Chicken Stir Fry
- 2 large chicken breasts
- 3 Tbsp. soy sauce
- 1 Tbsp. sherry
- 1/2 tsp. ground ginger
- 3 Tbsp. oil
- 3 celery stalks, sliced
- 2 red peppers
- 2 onions, sliced
- 1 20 oz. can pineapple chunks
- 2 Tbsp. vinegar
- 1/4 tsp. salt
- 1/4 c. water
- 1 Tbsp. cornstarch
- Cut chicken into 1/8 inch slices.
- In bowl, stir chicken, soy sauce, sherry, and ginger.
- In skillet over medium high heat, cook vegetables in hot oil until tender, stirring frequently.
- Return vegetables to skillet and add pineapple with syrup, vinegar, and salt.
- Stir water and cornstarch in a cup; add to skillet and cook until sauce is thickened and smooth, stirring constantly.
- Makes 4 main dish servings; 360 calories per serving.
