Sticky Date Pudding

  1. Preheat the oven to 350u0b0F. Lightly grease a 1-quart rectangular baking pan. Combine dates and 1/2 cup boiling water in a small bowl. Stir in baking soda. Let stand for 10 mins.
  2. Beat butter and sugar in a large bowl with an electric mixer until light and creamy. Add egg, beating well. Fold in sifted combined flours, then date mixture. Spoon into prepared pan.
  3. Bake for 30-35 mins until toothpick inserted into center comes out clean. Cool slightly on a wire rack.
  4. Meanwhile for the butterscotch sauce, combine all ingredients in a small saucepan on low heat. Stir until sugar dissolves. Bring to a boil on high heat. Reduce heat to low. Simmer for 1-2 mins until thickened slightly.
  5. Serve warm pudding with butterscotch sauce and whipped cream or ice cream.
