Lime And Ginger Chicken Patties
- 12 oz boneless skinless chicken breasts
- 1 1/2 tbsp grated lime peel
- 1 1/2 tbsp grated fresh ginger
- 2 tsp ground cumin
- 1 None egg white
- 2 None green onions, thinly sliced
- 1/4 cup flour
- None None FOR THE CHILI SAUCE
- 2 medium red bell peppers, quartered and seeded
- 1 medium onion, finely chopped
- 4 None serrano chili peppers, finely chopped
- 3/4 cup canned diced tomatoes
- 1 1/2 tbsp brown sugar
- Preheat the oven to 350u0b0F.
- Blend or process chicken until finely chopped. Add lime peel, ginger, cumin, egg and green onion; process until mixture forms a paste.
- Using hands, shape chicken mixture into eight patties. Coat in flour; shake away excess flour.
- Heat oiled large skillet on medium-high heat. Cook patties 2 mins each side or until browned. Place patties on baking pan. Bake 15 mins or until cooked through.
- For the chili sauce, broil bell peppers, skin-side up, until skin blisters and blackens. Cover pepper pieces in plastic wrap or paper for 5 mins. Peel away skin then chop pieces finely. Heat oiled small saucepan on medium heat. Cook onion and chili peppers, stirring, 2 mins or until onion is soft. Stir in tomato and sugar; simmer, uncovered, 5 mins. Stir in peppers.
- Serve chicken patties with chili sauce.
