Roasted Vegetable Tostadas
- None None cooking oil spray
- 4 None mini tortillas
- 1 lb sweet potatoes, cut into 1/2-inch dice
- 1 None medium red onion, cut into wedges
- 1 tbsp vegetable oil
- 1 tbsp taco seasoning mix
- 2 tbsp seed mix (or a mixture of pumpkin and sunflower seeds), toasted
- 2 tbsp chopped cilantro
- 1/3 cup mild chunky salsa
- 1/2 cup grated cheddar cheese
- None None Plain yogurt, chopped avocado, to serve
- Preheat oven to 350u0b0F. Spray four 3 1/2-inch tart pans with oil; place on a baking sheet. Heat tortillas in a microwave on high (100%) for 15 seconds. Line prepared pans with tortillas; bake for 8-10 mins, or until lightly colored.
- Increase temperature to 425u0b0F. Line a baking sheet with parchment. Toss sweet potato and onion with oil and seasoning mix, spread on baking sheet and bake for 20-25 mins, or until tender. Combine with seed mix and cilantro. Spoon into tortilla shells.
- Preheat an broiler to high. Spoon salsa over vegetables; top with cheese. Broil for 3-4 mins, or until cheese melts. Top with yogurt and avocado. Serve at once.
