Cracked Black Pepper Rice
- 1 c. long grain white rice
- 8 c. water
- 1 Tbsp. fresh lemon or lime juice
- 3 Tbsp. butter
- 1 small bay leaf
- 1/2 to 1 tsp. salt
- 1 to 1 1/2 tsp. cracked black pepper
- 5 to 6 lemon or lime wedges
- Wash and drain rice.
- Bring water, lemon juice, 1/2 teaspoon butter and bay leaf to a full boil in a large pan over high heat. Stirring constantly, pour in rice in a slow stream.
- Cook, uncovered, in briskly boiling water 12 to 15 minutes or until rice is just tender and fluffy.
- Turn rice into a strainer and drain. Let cool 1 to 2 minutes.
- Pick out bay leaf and spoon rice onto a serving platter.
- Stir in remaining butter, salt and black pepper. Toss gently to mix.
- Chill or let cool to room temperature. Garnish with citrus wedges.
- Makes 5 to 6 servings.
