Cracked Black Pepper Rice

  1. Wash and drain rice.
  2. Bring water, lemon juice, 1/2 teaspoon butter and bay leaf to a full boil in a large pan over high heat. Stirring constantly, pour in rice in a slow stream.
  3. Cook, uncovered, in briskly boiling water 12 to 15 minutes or until rice is just tender and fluffy.
  4. Turn rice into a strainer and drain. Let cool 1 to 2 minutes.
  5. Pick out bay leaf and spoon rice onto a serving platter.
  6. Stir in remaining butter, salt and black pepper. Toss gently to mix.
  7. Chill or let cool to room temperature. Garnish with citrus wedges.
  8. Makes 5 to 6 servings.
