Chocolate Peppermint Bars
- 8 oz soft chocolate cookies
- 11 tbsp unsalted butter, melted
- 3 cups powdered sugar
- 3/4 tsp peppermint extract
- 1 tbsp + 2 tsp vegetable oil
- 2 tbsp milk
- 7 oz dark eating chocolate, melted
- Grease an 8 x 12 inch deep-sided brownie pan.
- Blitz the cookies in a blender until they are fine crumbs. Combine the crumbs and butter in a medium bowl, then press the mixture evenly into the prepared pan. Cover and refrigerate for 30 mins or until the mixture is firm.
- Sift the powdered sugar into a medium bowl. Stir in the extract, 1 tablespoon of oil and enough of the milk to make a firm, spreadable paste. Spread the paste evenly over the chilled base and leave to stand until set.
- Mix the melted chocolate with 2 tsp oil in a small bowl, then pour evenly over the peppermint layer. Refrigerate until firm. Cut into slices with a large, hot knife.
