Chocolate Peppermint Bars

  1. Grease an 8 x 12 inch deep-sided brownie pan.
  2. Blitz the cookies in a blender until they are fine crumbs. Combine the crumbs and butter in a medium bowl, then press the mixture evenly into the prepared pan. Cover and refrigerate for 30 mins or until the mixture is firm.
  3. Sift the powdered sugar into a medium bowl. Stir in the extract, 1 tablespoon of oil and enough of the milk to make a firm, spreadable paste. Spread the paste evenly over the chilled base and leave to stand until set.
  4. Mix the melted chocolate with 2 tsp oil in a small bowl, then pour evenly over the peppermint layer. Refrigerate until firm. Cut into slices with a large, hot knife.
