Chocolate, Cherry And Hazelnut Cake
- 500 g cherries, stoned and halved with the stalks removed
- 250 g cherry jam
- 250 g flour
- 100 g ground hazelnuts
- 2 tbsp cocoa powder
- 250 g butter or margarine, chopped
- 125 g sugar
- 1/2 tsp vanilla extract
- 3 tbsp icing sugar
- 1 tbsp lemon juice
- To make the cake crumbs, combine the flour, hazelnuts, cocoa powder, sugar, salt and vanilla extract with the butter in a large bowl. Crumble with your fingers.
- Grease a 10 inch spring-form cake pan and mix the cherries with the cherry jam. Press 2/3 of the cake crumbs firmly into the bottom of the pan. Spread the cherry mixture on top, then sprinkle with the rest of the cake crumbs. Bake in a preheated oven at 350u0b0F for about 50 mins. Remove the cake from the oven and allow to cool.
- To glaze, blend the lemon juice with the powdered sugar and drizzle over the cake. Serve with some whipped cream mixed with a little cinnamon, if desired.
