Madeira Rice With Peas And Almonds
- 1 tsp. plus 2 Tbsp. butter
- 1/3 c. sliced almonds
- 3/4 c. chopped onion
- 1/2 c. Madeira wine
- 1 c. uncooked converted-style rice
- 1 (10 3/4 oz.) can condensed chicken broth
- 2/3 c. plus 1/2 c. water
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 10 oz. pkg. frozen peas
- In large saucepan, melt 1 teaspoon butter over medium heat. Add almonds and stir 2 to 3 minutes, until lightly browned. Remove from pan and reserve.
- Add 2 tablespoons butter and saute onions until tender, 5 minutes.
- Add Madeira wine; bring to a boil.
- Reduce heat and simmer 5 minutes.
- Add rice, broth, water, salt and pepper.
- Bring to a boil.
- Reduce heat; cover and cook 15 minutes.
- Stir in peas; cover and cook 5 minutes or until rice is tender and liquid has been absorbed.
- Sprinkle with toasted almonds.
