Madeira Rice With Peas And Almonds

  1. In large saucepan, melt 1 teaspoon butter over medium heat. Add almonds and stir 2 to 3 minutes, until lightly browned. Remove from pan and reserve.
  2. Add 2 tablespoons butter and saute onions until tender, 5 minutes.
  3. Add Madeira wine; bring to a boil.
  4. Reduce heat and simmer 5 minutes.
  5. Add rice, broth, water, salt and pepper.
  6. Bring to a boil.
  7. Reduce heat; cover and cook 15 minutes.
  8. Stir in peas; cover and cook 5 minutes or until rice is tender and liquid has been absorbed.
  9. Sprinkle with toasted almonds.
