Mini Pizzas With Gorgonzola And Pear
- 125 ml milk
- 250 g flour
- 1 pinch sugar
- 1/4 cube yeast (about 10g)
- 2 tbsp sunflower oil
- 250 g Gorgonzola cheese, coarsely chopped
- 1 None medium egg, beaten
- 200 g soured cream
- 2 None pears, cored and cut into slices
- 1-2 tbsp lemon juice
- 1 tsp olive oil
- 75 g walnuts, coarsely chopped
- 150 g radicchio, coarsely shredded
- 1-2 stalks basil, to garnish
- In a pan, gently heat the milk so that it is just warm, then add the yeast. Sieve the flour into a bowl with the sugar and salt. Stir in the milk and sunflower oil and mix in a food processor, using a dough hook, or with your hands to create a smooth dough. Cover and leave to rise in a warm place for about 20 mins. Meanwhile, mix half the Gorgonzola with the sour cream and the egg, then drizzle the pears with the lemon juice.
- Divide the dough into 4 equal portions and roll them out on a floured work surface to create 4 circular pizza crusts, each about 5 inches in diameter. Lift the pizza crusts onto a greased baking sheet, then brush with olive oil and dust the edges with a little flour. Spread with the cheese, leaving a 1/2 inch border around the edge. Distribute the pear slices on top of the cheese, then dot with the remaining Gorgonzola. Finally, sprinkle with walnuts. Bake in a preheated oven at 400u0b0F for 20-25 mins. Garnish with radicchio and basil leaves to serve.
