Grilled Chicken With Peanut Noodles

  1. Place chicken in a large roasting pan. Drizzle with 1/3 cup sweet soy sauce. Set aside.
  2. In a food processor or blender, combine 2 tbsp satay sauce, chilies, garlic, ginger and 1/4 cup hot water and process until smooth. Pour over chickens and turn to coat evenly. Cover with plastic wrap and chill for 2 hours to marinate.
  3. Preheat grill. Cook chicken for 30 mins over medium-high heat, turning and basting occasionally, until cooked through. Set aside, cover with foil and let rest for 5 mins.
  4. Meanwhile, heat a wok or large frying pan over high heat. Add oil and swirl to coat surface. Add carrots and pepper. Stir-fry for 2 mins. Add cabbage, noodles and remaining satay and sweet soy sauce. Toss until heated through.
  5. Cut each chicken into 6 pieces. Serve over noodles, topped with cilantro.
