Grilled Chicken With Peanut Noodles
- 2 None small whole chickens, butterflied
- 1/3 cup sweet soy sauce + 2 tbsp
- 1 cup satay sauce
- 2 None fresh small red chilies
- 2 cloves garlic, minced
- 2 pieces fresh ginger, thinly sliced
- 1 tbsp vegetable oil
- 2 None medium carrots, halved lengthwise, thinly sliced on a bias
- 1 None medium red pepper, thinly sliced
- 1/4 None Chinese cabbage, coarsely shredded
- 12.25 oz fresh chow mein noodles, soaked in boiling water for 2 mins, drained
- None None fresh cilantro leaves, to serve
- Place chicken in a large roasting pan. Drizzle with 1/3 cup sweet soy sauce. Set aside.
- In a food processor or blender, combine 2 tbsp satay sauce, chilies, garlic, ginger and 1/4 cup hot water and process until smooth. Pour over chickens and turn to coat evenly. Cover with plastic wrap and chill for 2 hours to marinate.
- Preheat grill. Cook chicken for 30 mins over medium-high heat, turning and basting occasionally, until cooked through. Set aside, cover with foil and let rest for 5 mins.
- Meanwhile, heat a wok or large frying pan over high heat. Add oil and swirl to coat surface. Add carrots and pepper. Stir-fry for 2 mins. Add cabbage, noodles and remaining satay and sweet soy sauce. Toss until heated through.
- Cut each chicken into 6 pieces. Serve over noodles, topped with cilantro.
