Banana Rum-Raisin Upside-Down Cake

  1. Preheat oven to 350u0b0F. Grease and line an 8 inch round cake pan with parchment paper. Combine raisins and 2 tbsp rum. Set aside.
  2. Heat sugar and 3/4 cup water over medium heat until sugar dissolves. Bring to a boil and cook, uncovered, without stirring, for 10 mins, or until light caramel color. Remove from heat. Add remaining rum then pour into prepared pan. Arrange sliced banana over top.
  3. Combine flour, baking soda, cinnamon, mashed bananas, eggs, oil and brown sugar until just combined. Fold in rum raisins. Transfer to prepared pan, smooth top and bake for 40 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
