Ham And Cheese Pastries
- 2 1/2 cups self-rising flour
- 2 tbsp butter, chopped
- 1/4 cup chopped basil
- 1/2 cup milk
- 1 cup grated Cheddar cheese
- 1/2 cup chopped ham
- 1/2 None red pepper, seeded and chopped
- 1/4 cup chopped gherkin
- Preheat the oven to 425u0b0F. Lightly grease a baking sheet.
- Sift flour into a large bowl. Add butter; rub in lightly using fingertips. Stir in basil.
- Mix milk and 1/2 cup water in a small bowl; reserve 1 tbsp. Add remaining milk mixture to flour mixture; stir to form a soft, sticky dough. Do not overmix.
- Turn out onto a lightly floured surface; knead lightly. Press or roll out to form a rectangle about 1/4 inch thick.
- Mix cheese, ham, pepper and gherkin in a medium bowl. Sprinkle over dough, pressing slightly.
- Roll up to form a log. Cut into 3/4 inch thick slices. Arrange slices, cut side up with sides touching, on prepared pan. Brush with reserved milk mixture.
- Bake 12-15 mins, until pastries sound hollow when tapped. Cool on a wire rack.
