Avocado Bread With Lime Icing And Pistachios

  1. Preheat the oven to 325u0b0F. Grease a 6 cup loaf pan and sprinkle with flour. In a bowl, mash the avocado and lemon juice. In a separate large bowl, beat the butter, sugar, vanilla extract, and a pinch of salt until creamy. Beat in the eggs one at a time.
  2. In another bowl, mix the flour, almonds, and baking powder together. Stir one-third of the flour mixture into the butter mixture, followed by one-third of the avocado mixture and one-third of the milk. Repeat twice. Spoon batter into the pan and smooth out. Bake for 1 hour 10 mins, until a skewer comes out clean, covering with aluminium foil after 20 mins.
  3. Allow to cool for 40 mins, then turn out of the pan and allow to cool completely on a wire rack.
  4. In a bowl, mix the powdered sugar, lime zest, and lime juice until smooth. Spread over the cake and sprinkle with the pistachios. Allow to set.
