Pork Gratin With Potatoes And Cabbage
- 1 1/2 lbs all-purpose potatoes, peeled, halved if large
- 2 tbsp vegetable oil
- 1 1/4 lbs pork tenderloin
- 1 tbsp butter
- 1 None onion, diced
- 1 None savoy cabbage, trimmed and sliced
- 2/3 cup reduced-sodium vegetable broth
- 1-1 1/2 tbsp chopped fresh thyme leaves, or 1-1 1/2 tsp dried
- Pinch None ground nutmeg
- 4 oz mozzarella cheese, cut into 12 slices
- 6 slices bacon, halved crosswise
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Preheat the oven to 400u0b0F. Cook the potatoes in a saucepan of boiling salted water for 15-18 mins until tender. Meanwhile, heat the oil in a large skillet over medium-high heat. Season the pork with salt and pepper, add to the skillet and cook for 5-6 mins until browned on all sides. Remove to a cutting board.
- Melt the butter in a saucepan over medium heat. Add the onion, cabbage and broth. Bring to a boil, then reduce heat, cover and simmer for 10 mins. Season with thyme, nutmeg, salt and pepper and set aside.
- Drain the potatoes thoroughly. Cut the pork into 12 medallions.
- Place 1 slice mozzarella on each pork medallion, then wrap 1 slice bacon around each. Spread the cabbage mixture in a large baking dish. Top with the potatoes and pork medallions. Mix together the cheddar and cream, then spread over the top. Bake for 25-30 mins until hot.
