Pork Gratin With Potatoes And Cabbage

  1. Preheat the oven to 400u0b0F. Cook the potatoes in a saucepan of boiling salted water for 15-18 mins until tender. Meanwhile, heat the oil in a large skillet over medium-high heat. Season the pork with salt and pepper, add to the skillet and cook for 5-6 mins until browned on all sides. Remove to a cutting board.
  2. Melt the butter in a saucepan over medium heat. Add the onion, cabbage and broth. Bring to a boil, then reduce heat, cover and simmer for 10 mins. Season with thyme, nutmeg, salt and pepper and set aside.
  3. Drain the potatoes thoroughly. Cut the pork into 12 medallions.
  4. Place 1 slice mozzarella on each pork medallion, then wrap 1 slice bacon around each. Spread the cabbage mixture in a large baking dish. Top with the potatoes and pork medallions. Mix together the cheddar and cream, then spread over the top. Bake for 25-30 mins until hot.
