Stir-Fried Shrimp With Spinach

  1. Heat 1 tsp oil in a pan and saute the sliced garlic and spinach for 2 mins. Add the oyster sauce, 2 tsp fish sauce and 1 pinch of sugar and simmer for about 4 mins.
  2. Meanwhile, heat the remaining oil in a second pan and saute the 1/2 the chili, the chopped garlic, spring onion and ginger over medium heat. Add the prawns and saute for 2 mins. Mix 1/4 cup sugar, 1/4 cup fish sauce, the tamarind paste and the remaining chili then add to the pan and simmer for 2-3 mins.
  3. Arrange the prawns and spinach on 2 plates. Sprinkle with fried onions.
