Festive Holiday Cupcakes

  1. Preheat oven to 375u0b0F. Line 2 x 6-hole muffin pans with paper liners.
  2. Cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and chocolate chips.
  3. Lightly fold flour and milk into butter mixture. Spoon into prepared pans, until holes are three-quarters full. Bake for 12-15 minutes, until a skewer comes out clean. Cool in pan for 5 minutes. Transfer to wire racks to cool.
  4. Color three-quarters of marzipan green and remaining quarter red. Roll green to a 3mm thickness. Cut out holly leaves. Roll red into balls for berries.
  5. To make the glaze, place powdered sugar in a bowl. Make a well in center and stir in water and butter, until smooth. Spread on each cake and decorate with marzipan leaves and berries.
