Tuna Pie With Mashed Potato Crust
- 2 1/4 lb potatoes, peeled, cut into chunks
- 3 tbsp butter
- 1/2 cup milk, warmed
- 2 (6 oz) cans tuna in oil, drained, flaked
- 1 (12 oz) can sweet corn, drained, rinsed
- 4 oz frozen peas
- 5 None spring onions, thinly sliced
- 1/3 cup fresh flat-leaf parsley leaves, chopped
- Preheat broiler.
- Cook potatoes in boiling salted water for 10 mins, or until tender. Drain and return to pan. Cook over medium heat for 1 min to dry out. Remove from heat. Add butter and mash until smooth. Stir in milk and season. Keep warm.
- Meanwhile, heat a large frying pan over high heat. Add tuna and corn. Cook for 2 mins. Add peas and cook for 1 min. Stir in spring onions and parsley. Season. Transfer to a large baking dish and top with mashed potatoes. Broil for 5 mins, or until lightly browned. Serve hot.
