Tuna Pie With Mashed Potato Crust

  1. Preheat broiler.
  2. Cook potatoes in boiling salted water for 10 mins, or until tender. Drain and return to pan. Cook over medium heat for 1 min to dry out. Remove from heat. Add butter and mash until smooth. Stir in milk and season. Keep warm.
  3. Meanwhile, heat a large frying pan over high heat. Add tuna and corn. Cook for 2 mins. Add peas and cook for 1 min. Stir in spring onions and parsley. Season. Transfer to a large baking dish and top with mashed potatoes. Broil for 5 mins, or until lightly browned. Serve hot.
