Fig And Raisin Cupcakes With Cream Cheese Frosting

  1. Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners. For the batter, sift flours and sugar into a medium bowl and make a well in the center. Add egg, applesauce, milk and oil. Using an electric mixer, beat on low speed for 1 min or until smooth. Stir in figs and raisins then spoon batter into prepared pan. Bake for 20-25 mins, until a skewer out clean. Cool in pan.
  2. For the frosting, mix cream cheese, zest and powdered sugar in a small bowl until well combined. Spread on the cooled cupcakes and serve.
