Fusilli With Sausage, Mushrooms And Cherry Tomatoes
- 10.5 oz fusilli or other short pasta
- 1 tbsp olive oil
- 6 None cooked Italian sausages, casings removed, thickly sliced
- 7 oz button mushrooms, sliced
- 2 cloves garlic, minced
- 8.75 oz cherry tomatoes
- 1/2 cup chicken stock
- 1/2 cup fresh flat-leaf parsley, chopped
- 1/4 cup heavy cream
- 1 oz Parmesan cheese, shaved
- Cook pasta in boiling salted water until al dente. Drain.
- Meanwhile, heat oil in a large frying pan over medium heat. Cook sausages for 4-5 mins, until browned. Add mushrooms and garlic. Cook for 2-3 mins, until softened. Add tomatoes and stock. Season. Cook for 5 mins, until reduced slightly.
- Increase heat to high. Add pasta, parsley and cream and toss to coat. Serve topped with Parmesan.
